Creamy Potato Bacon Soup Recipe
This slow cooker creamy potato bacon soup is a new family favorite—easy for weeknight dinners and perfect for meal prep. Loaded with vegetables like potatoes, carrots, onion, celery, and tomatoes, it’s sure to please everyone.
Ingredients:
- 3.5 cups chicken broth, 4 russet potatoes, peeled and diced, 1 (14 oz) can diced tomatoes, 1 yellow onion, diced, 1 cup shredded carrots, 1 cup diced celery, 1 tbsp dried parsley, 1/2 tbsp garlic powder, 1 tsp dried basil, 1 tsp salt, 1/2 tsp black pepper, 1 lb ground beef, 12 oz cooked and chopped bacon, 3 tbsp butter, 1/4 cup flour, 2 cups half and half, 2 cups shredded cheddar or pepper jack cheese, Garnish: green onions, reserved chopped bacon
Instructions:
- In the slow cooker, combine broth, tomatoes, potatoes, onion, carrots, celery, parsley, garlic powder, basil, salt, and pepper. Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, brown the ground beef and add it to the slow cooker along with the bacon.
- In a separate pan, melt butter, whisk in flour, then gradually add half and half, whisking until thickened (2-3 minutes).
- Pour the mixture into the slow cooker, add cheese, and stir until melted. Serve hot, garnished with green onions and extra bacon. Enjoy!
